Watermelon Basil Lime Ice Pops

Nothing says summertime like watermelon and ice pops! What I love about watermelon aside from its nutritional content, is that it’s one of those fruits that go well with a few savory herbs like basil. I have never met a pairing that complements each other so well like watermelon and basil. The lime adds a nice zest to it too! Who would have thought all three would create the perfect summer treat!
Watermelon is 91% water, which makes it a great choice to snack on to help keep you hydrated on a hot summer day. This juicy summer fruit is low in carbohydrates and high in vitamins C, Vitamin B5, B6, copper, and potassium. It also is a good source of beta-carotene, which your body converts to vitamin A. Watermelons are a rich source of amino acid citrulline and the antioxidant lycopene. Studies have shown that lycopene and citrulline have had positive effects on heart health by improving blood flow and reducing blood pressure.
What you need
- 1.25 cup water
- 9 oz watermelon cut up
- 1 tbsp dried and crushed basil leaves
- 2 tbsp maple syrup
- ½ fresh lime or 1 tbsp lime juice
What To Do
- In a small saucepan, add water, maple syrup, and basil. Bring to a boil for five minutes.
- In a blender add the basil syrup mixture, watermelon, and squeezed lime juice.
- Blend until smooth.
- Pour into ice pop molds
- Freeze for 4 hours or overnight
